Bikini Recipe
Serves 10 guests
To make the Clementine Syrup (produces 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g fine sugar
Ingredients for the Premix (makes 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine cordial (see above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing
Directions
To prepare the Cordial: Combine all the components inside a pan, heat until it reaches a simmer, stirring to dissolve. Then, take off the stove and let it to cool entirely. Transfer into an sealable bottle, seal and refrigerate it chilled, where it will keep for up to a month.
For the Batch Mix: Combine every spirits and syrup into a sizeable container, leave to sit for one hour, then filter it preferably using cheesecloth, so it's completely strained.
To serve: Add 85ml from the cocktail base to a mixing glass filled with ice, and agitate gently for a minute to cool it down. Filter to a chilled martini glass or equivalent, decorate with some cranberries adding the final touch using a brief mist with the mandarin essence above the glass.
